Perfect Sweet® Fruit Tea Jelly with Berries

We developed this sugar free jelly recipe for a customer on a restricted sugar diet. Use Perfect Sweet™ instead of sugar and caffeine free herbal tea makes this tasty jelly, which is perfect for Christmas Trifle or as a dessert with ice cream for the family. The 1 1/2 cups of tea can be substituted with berry juice or any fruit juice but please note that it will no longer be sugar free because of the fructose content in the fruit juice. If you are a vegetarian you may want to substitute gelatine with agar agar powder (5g agar = 4.5g carb) an extract from seaweed available at health food stores.

Ingredients:
2 caffeine free herbal tea bags of your choice
1 1/2 cups boiling water
1 - 2 tablespoons Perfect Sweet™
1/2 cup boiling water
3 teaspoons of gelatine (or 1 teaspoon agar agar powder *)
1 punnet berries

Method:
Infuse tea bags (we used Blackcurrant) in one and a half cups of boiling water for 5 minutes.

Add Perfect Sweet and stir to dissolve.

Pour 1/2 cup boiling water into another bowl, add the 3 teaspoons of gelatine and stir briskly until dissolved.

Add the 1 1/2 cups of infused tea and stir well.

Place berries in the mould / moulds.

Pour over the slightly cooled (room temperature) jelly.

The berries will rise to the top. Set in the fridge.

Decorate with a mint leaf and serve with ice cream or yoghurt.

Makes one and a half litre jelly or 4 half-cup jellies.


Optional

Soak agar powder in a small saucepan with 1/2 cup of cold water. Infuse tea bags (we used Blackcurrant and Lemon tea bags) in one and a half cups of boiling water for 5 minutes. Add Perfect Sweet™ and stir to dissolve. Gently bring cold water and agar powder to the boil and simmer for 1 minute, stirring constantly. Add tea and stir well. Pour mixture into jelly mould / moulds and set in the fridge.
