Perfect Sweet® Lemon Curd
My Grandmother used to make me the most delicious Lemon Curd or as I knew it then “Lemon Butter”.
This is a healthy version of the recipe using Perfect Sweet instead of sugar and I think it tastes
even more delicious. It certainly is better for me as it does not spike my sugar levels.
Ingredients:
75g unsalted butter
2 large eggs
40gm Perfect Sweet xylitol
100-120 ml lemon juice
Zest of lemon
Method:
Beat eggs thoroughly.
Melt butter in a bowl over boiling water.
Add Perfect Sweet, lemon juice and zest and whisk
constantly until a custard consistency is reached (about 5 – 10 minutes).
Pour into a jar and refrigerate.
Note: You must keep stirring until the mixture is thickened, otherwise the
eggs will curdle and separate from the butter and lemon mixture.
