Perfect Sweet® Baked Lime Cheesecake
Traditional cheesecakes are high in fat and sugar, but this recipe uses natural, sugar free Perfect Sweet
xylitol and low fat dairy. It is a deliciously perfect low carb, low GI, low fat treat! Extra light cream
cheese is less than 5% fat. Our motto is everything “in moderation” and this cake is the perfect size.
Ingredients:
250g low-fat ricotta
220g extra-light cream cheese
250g low-fat yoghurt
2 tspn vanilla extract
3 tblsps cornflour
2 eggs
Finely grated zest of 1 lime
90-100g Perfect SweetTM xylitol (or to taste)
250g (1 punnet) fresh strawberries
Extra Perfect Sweet xylitol for decoration
Method:
Preheat oven to 160°C. Line the base of a 20cm spring-form tin with baking paper.
Combine the low-fat ricotta, extra-light cream cheese, yoghurt, cornflour, eggs,
zest and Perfect SweetTM xylitol in the bowl of an electric mixer and beat at medium
speed until smooth.
Pour the batter into the prepared tin and bake for 50 minutes or until set. Turn the
oven off and leave the cheesecake to cool in the oven for 60 minutes. Leave the oven
door slightly open.
Run a knife around the edge to loosen, then set aside to cool completely.
Sift extra Perfect Sweet xylitol over the top of the cake for decoration.
Serve with the strawberries for a delicious low carb, low GI dinner party treat.
Variations:
Replace the strawberries with your favourite fruit in season.
To make a lemon cheesecake, simply replace the lime zest with a zest of one lemon
