Flourless Orange Cake

Perfect Sweet™ Apple Crumble

Ingredients:
4 cups fresh apple or canned pie apple
1/2 cup water
2 tbsp Perfect Sweet®
Topping Options
50 g butter or non-dairy spread
2 tbsp Perfect Sweet®
Plus either
1 cup raw or toasted wheat-free muesli
1 cup flakes or bran (quinoa, rice, corn, oats, psyllium)
1/4 cup flaked almonds or coconut
Or (Gluten-free)
1 cup brown rice flour
1/4 cup slivered almonds
1/4 cup coconut
1/2 cup rice or gluten free corn flakes

Method:
Preheat oven to 180°C.
If using canned pie apple, mix with the water and Perfect Sweet® xylitol.
If using fresh apple, peel, chop and stew the apple with the water and Perfect Sweet® xylitol until it is soft, but not mushy.
Place apple filling into a large casserole dish.
Melt together the butter or non-dairy spread and the Perfect Sweet®.
Combine dry topping ingredients into a medium bowl.
Mix in the melted butter/Perfect Sweet® and cover fruit with a complete layer of topping.
Bake for 15-20 minutes, until the crust is crispy and crumbly and the filling is hot.
The gluten-free variation takes longer to cook - about 25 minutes.

Note
Serves 8. Suitable for freezing.

Everybody loves a crunchy topping, so experiment with the following variations for a quick, easy to prepare dessert.
For winter: Fresh pears or pineapple can be used in place of apple.
