Perfect Sweet® Flourless Chocolate Cake
Ingredients:
200g dark chocolate, chopped
150g unsalted butter, chopped
1 tbs finely grated orange zest
5 eggs, separated
¼ cup (55g) Perfect Sweet xylitol)
1¼ cups (155g) almond meal
Cocoa powder, to dust
Method:
Pre-heat oven 180°C.
Grease and line a 22cm round spring form cake tin.
Place the chocolate, butter and orange zest in a saucepan
over a low heat and stir until the chocolate has melted and mixture is smooth. Set aside to cool.
Separate the egg yolks and egg whites. Using a mixer beat the eggs and Perfect Sweet xylitol on a high speed until thick and creamy,
then transfer to a large bowl. Gently fold in the chocolate mixture and almond meal.
Beat egg whites in a clean bowl on a very high speed until soft peaks form.
Fold half of the beaten egg white into the chocolate mixture and then fold in the remaining egg white.
Pour into the prepared tin and bake for 50 minutes or until cooked.
Cool in the tin for 15 minutes, before removing cake.
Dust cake with cocoa and decorate.

Serving Suggestion:
Chocolate Orange Ganache
Ingredients:
200g milk chocolate, chopped
1/3 cup (80ml) thickened cream
1 tablespoon Cointreau
Method:
Place the chocolate in a heat proof bowl. Place the cream and liqueur into a
saucepan and bring to just below boiling point. Pour this mix over the chocolate
until it is melted and the ganache is smooth.
