Perfect Sweet™ Flourless Orange Mini Muffins
Ingredients:
2 oranges (total weight 500gms)
180 gms PerfectSweet®
250 gms almond meal
225 gms eggs = 1 cup (4-6 Eggs, size depending)
1 teaspoon of baking powder
Method:
Microwave unpeeled oranges for 10 minutes on high or boil for 1 hour until tender. Strain, cool and remove
pips. Do not peel oranges.
Preheat oven to 180°C. Grease mini muffin trays.
Using a food processor blend unpeeled oranges and PerfectSweet®. Add eggs, almond meal and baking powder,
blend well.
Spoon mixture into cupcake papers, filling each almost to the top (this mixture does not rise as much as normal muffins as it is flour-free).
Bake for approximately 20 mins or until cooked. Test with skewer. Do not overcook as the muffins should be moist.
Serving suggestion: Sprinkle with Perfect Sweet Xylitol.
This recipe yields 30-40 cakes. Freeze two at a time in a small Glad Wrap bag and they will be perfect for afternoon teas and lunchboxes.
