Perfect Sweet® Flourless Orange Tea Cake
Ingredients:
1 orange
100 gms PerfectSweet®
250 gms almond meal
225 gms eggs = 1 cup (4-6 Eggs, size depending)
1 teaspoon of baking powder
Method:
Microwave orange for 10 minutes on high or boil for 1 hour until tender. Strain, cool and remove pips.
Line a 20cm spring form cake tin with baking paper. Preheat oven to 180°C or 150°C Fan Forced.
Using a food processor blend oranges and PerfectSweet®. Add eggs, almond meal and baking powder, blend
well.
Pour into the lined spring form tin and bake for one hour or until cooked. Test with skewer. Do not overcook.
The cake should be moist. Allow to cool in tin before removing.
This recipe can also be baked as a slice or miniature cup cakes.
