This Vanilla Mousse is the easiest recipe ever and can be made quickly when unexpected guests pop in.  If you would like to serve 12 guests, double this recipe and use the whole packet of the Classic Bake Mix.
Raspberries are low in calories and fats yet they are a rich source of dietary fibre, antioxidants and they add a healthy boost.


  • 90g Perfect Sweet™ Classic Bake Mix
  • 300ml whipping cream
  • 1 tsp pure vanilla extract

Raspberry Puree

  • 250g fresh raspberries
  • Perfect Sweet xylitol, to taste

Fresh berries and mint leaves, to serve


  1. Combine the Classic Bake Mix and cream in a medium bowl. Use an electric beater to beat until firm, but do not overbeat or it will separate.
  2. Gently fold in vanilla.
  3. Spoon raspberry puree into the bottom of the small glasses or bowls. Top with vanilla mousse and chill in refrigerator. Once chilled, a thin layer of raspberry puree can be added to the top if required. Serve topped with berries.

Raspberry Puree

Simply process fresh or thawed, frozen Australian raspberries and Perfect Sweet® xylitol to taste in a food
processor or blender and strain through a fine mesh sieve.
