Easy Sugar Free Custard

  • 300 ml thickened cream
  • 3 X large egg yolks
  • 1½  tbspns Perfect Sweet® xylitol

METHOD

Gently heat the cream in a small saucepan. Do not let it boil or cream will separate.

While the cream is heating, beat the egg yolks with the xylitol in a bowl until golden yellow and smooth then strain into clean bowl.

Pour the warm cream into the egg mixture and stir continually. Return custard to saucepan on a low heat and stir gently while it thickens. It should be thick enough to coat the back of a metal spoon. Remove it from the heat and leave to cool down.

Use the leftover egg whites for an omelette in the morning or make mini meringues and put aside to decorate your Christmas Trifle.

"Just wanted to say that I have now tried both packets of baking mixes.  First the brownies (all now eaten) and this afternoon I made the lamingtons.  Im soooooooo impressed and sooooooo happy that I have finally found a tasty, not too expensive, low carb sweet treat to have made up in the freezer.  I will never be without a packet in my cupboard !!!!!!!!!!" - thanks  Lindy

"I was given chocolate bake mix by a friend, left it in the cupboard for ages assuming it would be average tasting. Made brownies this evening and will definitely be buying more and recommending it to all my colleagues in the health industry." - Regards, Sandra
