Do not over beat the egg whites. Beat until soft peaks form. If you over beat they will become very dry and will be difficult to fold into the brownie mix.

Fold in gently and let the air in. Spoon into the tin and bake immediately. Do not over bake as flourless cakes will become very dry.

The Choc Fudge Brownies should still be moist in the middle when you take them out of the oven. Leave them to cool on the tray and they will continue to cook just enough to make delicious brownies.

The brownies will not rise a lot because they have no flour and no raising agents. The mix is completely natural, no additives and no artificial sweeteners.

They will freeze very well, unlike many packet cakes.
