Makes 16 biscuits approve
You
will need:
An electric mixer
A rubber spatula
A scone tray lined with baking paper
Ingredients:
60g unsalted butter
35g (2 tablespoons) Perfect Sweet™
1 teaspoon lemon zest
1 egg
90g (3/4 cup) plain flour
1/4 teaspoon bi-carbonated soda
17g (1 tablespoon) cocoa powder
1/4 teaspoon vanilla extract.
Method:
Pre heat oven to 200C.
Cream together unsalted butter, Perfect Sweet™ and lemon
zest
until butter starts changing colour.
Add egg and mix with spatula.
Sieve flour, bi-carbonated soda and cocoa powder
into batter until mixed.
Add vanilla extract.
Drop by tablespoonfuls onto baking paper leaving enough
room for biscuits to spread.
Push down with a fork.
Bake at 200C for 10-12 minutes.
Remove from oven and allow to cool on tray before removing.
