Makes 30 biscuits


  • 100g rolled oats
  • 100g plain flour
  • 40g shredded coconut, toasted
  • 90g Perfect Sweet® xylitol
  • 2 tbsp (40ml) water
  • 125g butter
  • 50g banana, very ripe and mashed
  • ½ teas bicarbonate of soda


  1. Pre heat oven to 150°C/130°C fan forced. Grease and line 2 baking trays with baking paper.
  2. Mix the rolled oats, plain flour, coconut and Perfect Sweet® xylitol in a bowl and set aside.
  3. Place the water and the butter into a saucepan and melt on low heat.
  4. Add the mashed banana and bicarb to the saucepan and stir well. Pour this mixture into the oat mixture and combine well.Divide mixture into walnut sized balls. Place onto the 2 lined baking trays and using your fingers, gently flatten.
  5. Bake at 150°C/130°C fan forced for 12 minutes or until golden brown.
  6. Leave on trays for 5 minutes before transferring to a wire rack to cool completely.
