Here is a deliciously healthy sugar free and gluten free gingerbread men recipe for the kids to make over the Christmas and New Year holidays. High in protein and sweetened only with Perfect Sweet xylitol, the Gingerbread Men are a great snack that won’t also send sugar levels spiraling out of control.

Chocolate Gingerbread Men

Sugar Free and Gluten Free


  • 250g almond meal
  • 2½ teaspoons (10g) cacao or good quality cocoa powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon gluten free baking powder
  • 60g Perfect Sweet® xylitol
  • 1 X-large egg white
  • 25g cooled melted butter
  • ½ teasp ginger (optional)



  1. Preheat oven to 150℃. Line 2 baking sheets with baking paper.
  2. Combine almond meal, cocoa, cinnamon, vanilla, baking powder and xylitol in a food processor.
  3. Add egg white, cooled melted butter and process again.
  4. Remove mixture from processor and lightly knead into a ball.
  5. Roll out the dough between 2 sheets of baking paper, to a 5mm thickness.
  6. Cut out gingerbread men and place on the baking sheets.
  7. Bake for 20 minutes. Remove from oven and cool.


  1. Beat cream cheese with xylitol until smooth.
  2. Fill a piping bag with the mixture and pipe your favourite designs onto the gingerbread men.


½ teaspoon of ginger can be added to the gingerbread men mixture if preferred. Ginger can be a strong taste for some children, so it is an option to add according to taste.
