Ingredients

Method

  1. Preheat oven to 160˚C/140˚C fan-forced. Line 2 baking trays with baking paper.
  2. Use an electric beater to beat butter, egg yolk, ricotta, and vanilla in a medium bowl until pale.
  3. Add Classic Bake Mix and mix on low speed to combine. Beat for 2 minutes on medium speed.
  4. Spoon mixture into a piping bag and pipe walnut-sized portions onto lined trays allowing a little space for spreading.
  5. Bake for 20 minutes. Cool on trays then store in airtight container.

Variation:

Stir in either ½ cup of chia seeds, ½ cup pistachio nuts or ½ cup of desiccated coconut into cookie mixture before piping onto trays.
