The days are getting warmer and longer and the farmer’s markets are brimming with springtime produce, One of my favourite summertime salads is a simple arugula and strawberry salad.

The the sweet and peppery sensations will excite your taste buds.

Salad Ingredients:

  • Arugula leaves
  • Strawberries – hulled and cut into quarters or halves 
  • Feta cheese – crumbled  (You can use goats cheese if preferred)
  • Red onion, thinly sliced
  • Lightly toasted walnuts or almond slivers

Wash the arugula leaves, hull the strawberries and cut into quarters.  Toss all the ingredients together in a salad bowl and drizzle the dressing of your choice over the top and enjoy!


French Dressing:

  • ½  clove garlic
  • 1 tsp Dijon mustard
  • 2 tbsp white or red wine vinegar
  • 6 tbsp extra virgin olive oil
  • 1 pinch sea salt
  • 1 pinch freshly ground black pepper
  • ½  tsp Perfect Sweet® xylitol, or to taste

These dressings are based on a ratio of 3 parts oil to 1 part acid (vinegar or lemon). It’s only a guide and it’s always wise to taste your dressing after letting it sit for a minute so that the flavours have a chance to mix well. 


  1. Peel and finely chop the garlic and put into a container.
  2. Add the Dijon mustard, white or red wine vinegar and extra virgin olive oil, with a pinch of sea salt and freshly ground black pepper (remember that the arugula is naturally peppery so do not over season)
  3. Mix well.

Balsamic Dressing:

  • 6 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Pinch of sea salt
  • Freshly ground black pepper
  • ½ tsp Perfect Sweet® xylitol


  1. Place the extra virgin olive oil, balsamic vinegar, salt, black pepper (remember that the arugula is naturally peppery so do not over season) and xylitol into a bowl.
  2. Mix well.
