Strawberry and Arugula Salad

The days are getting warmer and longer........this simple summertime salad, Arugula and Strawberry salad, with sweet and peppery sensations will excite your taste buds. 

There are 2 sugar free dressings to choose from below.

Salad Ingredients:

  • Arugula leaves
  • Strawberries – hulled and cut into quarters or halves 
  • Feta cheese – crumbled  (You can use goats cheese if preferred)
  • Red onion, thinly sliced
  • Lightly toasted walnuts or almond slivers

Wash the arugula leaves, hull the strawberries and cut into quarters.  Toss all the ingredients together in a salad bowl and drizzle the dressing of your choice over the top and enjoy!

Sugar Free Dressings

1. French Dressing:

  • ½  clove garlic
  • 1 tsp Dijon mustard
  • 2 tbsp white or red wine vinegar
  • 6 tbsp extra virgin olive oil
  • 1 pinch sea salt
  • 1 pinch freshly ground black pepper
  • ½  tsp Perfect Sweet® xylitol, or to taste

    METHOD: 

  1. Peel and finely chop the garlic and put into a container.
  2. Add the Dijon mustard, white or red wine vinegar and extra virgin olive oil, with a pinch of sea salt and freshly ground black pepper (remember that the arugula is naturally peppery so do not over season)
  3. Mix well and sit for at least a few minutes to allow the flavours to infuse.  When ready, pour over your salad.

2.  Balsamic Dressing:

  • 6 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Pinch of sea salt
  • Freshly ground black pepper
  • ½ tsp Perfect Sweet® xylitol

METHOD:

  1. Place the extra virgin olive oil, balsamic vinegar, salt, black pepper (remember that the arugula is naturally peppery so do not over season) and xylitol into a bowl.
  2. Mix well and sit for at least for a few minutes to allow the flavours to infuse.  When ready, pour over your salad.
