INGREDIENTS

  • 125g cream cheese, softened 
  • 50g unsalted butter, softened 
  • 45g ( 1 /4 cup ) Perfect Sweet xylitol 
  • 1 teaspoon pure vanilla extract or
  • 1 teaspoon fresh lemon juice and finely grated zest of 1 lemon 

METHOD

  • Beat cream cheese, butter and xylitol until smooth. 
  • Mix in vanilla extract or lemon juice and zest. Taste and adjust sweetness.
  • A little beetroot powder can be added to make a pretty pink filling. 
  • Sandwich between 2 cookies and serve..
