Vanilla or Lemon Filling
- 125g cream cheese, softened
- 50g unsalted butter, softened
- 30g Perfect SweetTM xylitol
- 2 teaspoon pure vanilla extract or
- 1 teaspoon fresh lemon juice and finely grated zest of 1 lemon
- Beat cream cheese, butter and xylitol until smooth.
- Mix in vanilla extract or lemon juice and zest. Taste and adjust sweetness.
- A little beetroot powder can be added to make a pretty pink filling.
- Sandwich between 2 cookies and serve..
